  • 2 tbsp butter (plus extra for bread)
  • 1 tbsp olive oil
  • 1 shallot (finely chopped)
  • 2 cups mushrooms (Portobello, Cremini, or Shiitake, sliced)
  • 1 tsp thyme (fresh or dried)
  • 1 tbsp balsamic vinegar (optional)
  • Salt and pepper to taste
  • 4 slices Swiss cheese (or Gruyère)
  • 8 slices bread (Rye, Sourdough, or Artisan)

Instructions

  1. Heat a dry skillet over medium heat and add sliced mushrooms. Cook for 5–7 minutes until golden brown. Add butter, olive oil, and shallots; cook for an additional 5 minutes until shallots are tender.
  2. Stir in thyme along with salt and pepper to taste. Optionally drizzle in balsamic vinegar.
  3. Butter one side of each slice of bread. Place a slice of cheese on the unbuttered side, followed by the mushroom mixture, another slice of cheese, and top with another slice of bread.
  4. Heat a skillet or panini press over medium heat and cook sandwiches for about 2–3 minutes per side until golden brown and cheese is melted.
