  • 4 ears of corn, husks and silk removed
  • 2 tbsp butter, melted
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup crumbled cotija cheese
  • 1/4 cup chopped cilantro
  • 1 lime, juiced
  • 1/4 tsp chili powder (optional, for extra heat)
  • 1 cup long-grain white rice
  • 2 cups water
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 avocado, diced
  • Hot sauce, to taste (optional)
  • Lime wedges, for serving

Instructions

  1. In a bowl, combine cubed chicken with olive oil and spices; marinate for at least 30 minutes.
  2. Heat a skillet over medium-high heat and cook the marinated chicken for about 5-7 minutes per side until golden brown.
  3. Prepare the corn by grilling or boiling until tender; mix cooked kernels with mayonnaise, sour cream, cilantro, lime juice, and chili powder.
  4. Cook rice according to package instructions; fluff once done.
  5. Assemble bowls with rice as the base, topped with chicken, street corn mixture, black beans, and diced avocado.
