  • 1 green onion (finely sliced)
  • Sesame seeds
  • 1 ½ tbsp low-sodium soy sauce (or tamari/coconut aminos)
  • 1 ½ tbsp rice vinegar or white apple vinegar
  • 1 tsp sesame oil
  • 1 tbsp honey or maple syrup
  • 2 large garlic cloves (minced)
  • 1 tsp red chili flakes

Instructions

  1. Wash and dry cucumbers, then trim ends. Slice cucumbers at a 45° angle between chopsticks, creating spirals.
  2. In a bowl, whisk together soy sauce, rice vinegar, sesame oil, honey/maple syrup, minced garlic, and chili flakes until well combined.
