  • 3 boneless skinless chicken breasts (cut into cutlets)
  • ½ cup all-purpose flour
  • 12 ounces mushrooms (thickly sliced)
  • 4 tablespoons unsalted butter (divided)
  • 1 tablespoon olive oil
  • 2 garlic cloves (minced)
  • 2 large shallots (sliced)
  • ½ cup dry white grape juice
  • 1 ½ cups low-sodium chicken broth
  • ½ cup heavy cream
  • Fresh thyme springs

Instructions

  1. Pat chicken cutlets dry and dredge in a mixture of flour, salt, pepper, and garlic powder.
  2. In a large skillet, heat 2 tablespoons of butter and olive oil over medium heat. Brown the chicken cutlets on both sides until cooked through; keep warm.
