  • 14 oz chicken or turkey sausage, cut into 1/2-inch slices
  • 2 medium sweet potatoes, cut into 1/2-inch cubes
  • 2 cups broccoli, cut into 1/2-inch florets
  • 1 tablespoon unsalted butter
  • 4 medium cloves garlic, minced
  • 1/4 cup honey
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon apple cider vinegar
  • Salt and pepper, to taste
  • 2 tablespoons minced fresh parsley

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. On a large sheet pan, arrange the sliced sausage, cubed sweet potatoes, and broccoli florets evenly.
  3. In a small saucepan, melt the butter over medium heat, add the minced garlic and sauté until fragrant (about 1 minute).
  4. Stir in honey, soy sauce, apple cider vinegar, salt, and pepper; simmer for 2-3 minutes.
  5. Pour the sauce over the arranged ingredients on the sheet pan and toss to coat.
  6. Roast in the oven for 25-30 minutes, stirring halfway through for even cooking.
