  • 3 1/2 cups grated zucchini (well-drained)
  • 1 white onion, finely chopped
  • 16 ounces shredded cheddar cheese (divided)
  • 1 cup thawed corn kernels
  • 1 jalapeño, finely chopped
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 box (8.5 ounces) corn muffin mix

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grate the zucchini and squeeze out excess moisture using a clean kitchen towel.
  3. In a large bowl, mix together the grated zucchini, onion, half of the cheddar cheese, corn kernels, jalapeño, eggs, garlic powder, cumin, salt, black pepper, and corn muffin mix until well combined.
  4. Grease a baking dish and pour the mixture in evenly. Top with remaining cheddar cheese.
  5. Bake for about 50 minutes or until golden brown and set in the middle.
