  • 2 cups medjool dates, pitted
  • 1 cup unsweetened shredded coconut (divided)
  • 2 tablespoons chocolate chips or dark chocolate pieces (divided)
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon almond butter (optional)

Instructions

  1. Preheat your oven to 400°F and toast all shredded coconut on a baking sheet for 5-10 minutes until golden brown.
  2. In a food processor, blend pitted dates, almond butter (if using), 2/3 cup toasted coconut, 1 tablespoon chocolate chips, sea salt, and vanilla extract until it forms a dough ball.
  3. Add in the remaining tablespoon of chocolate chips and roll into approximately 16 balls using your hands or a cookie scoop.
  4. Roll each ball in the remaining toasted coconut until well-coated.
  5. Store in an airtight container in the fridge for up to 1-2 weeks or freeze for up to 3 months.
