  • 2 cups cauliflower florets
  • 2 cups cubed butternut squash
  • 1 pound pizza dough
  • 5 ounces baby kale or spinach
  • 2 cups shredded Asiago cheese
  • 1/4 cup chopped Kalamata olives
  • nonstick cooking spray
  • 2 teaspoons extra virgin olive oil
  • 2 teaspoons minced fresh rosemary
  • 1 teaspoon kosher salt
  • 1/4 teaspoon pepper
  • 2 cloves garlic, minced
  • 1/4 teaspoon crushed red pepper flakes

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. On a sprayed baking sheet, toss cauliflower and butternut squash with rosemary, olive oil, salt, and pepper. Roast for about 25 minutes until golden brown.
  3. Roll out the pizza dough to your desired thickness.
  4. Transfer the dough to an oiled baking sheet or pizza stone. Spread minced garlic over it and layer with baby kale/spinach and roasted vegetables.
  5. Sprinkle half of the shredded Asiago cheese on top with Kalamata olives and crushed red pepper flakes.
  6. Bake for 15-20 minutes until cheese is melted and bubbly.
  7. Allow cooling slightly before slicing; enjoy warm!
