  • 1/2 cup + 3 tablespoons all-purpose flour
  • 1/2 cup whole wheat pastry flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 2/3 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup pumpkin puree
  • 1/4 cup + 1 tablespoon milk
  • 1/4 cup unsalted butter, melted and cooled
  • 2 teaspoons pure vanilla extract
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/3 cup pecans, chopped
  • 1 1/2 cups hot water

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a casserole dish.
  2. In a bowl, sift together the all-purpose flour, whole wheat pastry flour, baking powder, salt, granulated sugar, cinnamon, ginger, nutmeg, and cloves.
  3. In another bowl, mix pumpkin puree, milk, melted butter, and vanilla extract.
  4. Gradually combine the wet and dry ingredients until just mixed; pour into the greased dish.
  5. For the topping, mix granulated sugar, brown sugar, cinnamon, and chopped pecans before sprinkling over the batter.
  6. Carefully pour hot water over the topping without stirring.
  7. Bake for 40 minutes or until set in the center; let cool for 5 minutes before serving.
