  • 1 lb turkey sausage (or plant-based sausage)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 14.5 oz can diced tomatoes, drained
  • 2 quarts chicken stock
  • 1/2 cup heavy cream
  • 1 cup ditalini pasta
  • 1/2 cup freshly grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot over medium heat, add olive oil and brown the turkey sausage until fully cooked.
  2. Remove the sausage and sauté diced onion and minced garlic in the drippings until soft.
