  • 8 oz spaghetti
  • 1 tbsp olive oil
  • 1/2 cup diced onions
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chicken broth
  • 1/4 tsp smoked paprika
  • 1/4 tsp black pepper
  • 1/2 tsp salt
  • 1/4 cup chopped fresh parsley
  • 1 tbsp butter
  • 1/4 tsp crushed red pepper flakes (optional)

Instructions

  1. Cook spaghetti according to package instructions. Drain and set aside.
  2. In a large skillet over medium heat, heat olive oil. Season chicken with salt, pepper, and smoked paprika. Cook until golden brown on both sides (about 6-7 minutes each). Slice and set aside.
  3. In the same skillet, melt butter and sauté onions and garlic for 2-3 minutes until softened.
  4. Add chicken broth to the skillet; bring to a gentle simmer. Stir in heavy cream and allow to cook for a few minutes until slightly thickened.
  5. Reduce heat to low; stir in Monterey Jack and Parmesan cheeses until melted smoothly into the sauce.
  6. Toss in cooked spaghetti until well coated with the sauce.
  7. Serve topped with sliced chicken and garnish with parsley and crushed red pepper flakes if desired.
