1 pound ground chicken
1/4 cup crumbled feta cheese
1 small onion, finely chopped
2 cloves garlic, minced
1 bell pepper, chopped (red or green)
1 cup cherry tomatoes, halved
1/3 cup pitted Kalamata olives, sliced
Juice of half a lemon
1 tablespoon olive oil
1 teaspoon dried oregano
1 teaspoon smoked paprika
1/2 teaspoon ground cumin
Salt and pepper to taste
2 tablespoons fresh parsley, chopped
Instructions
Heat olive oil in a large skillet over medium heat. Add ground chicken and cook until browned (6-8 minutes).
Stir in the onion and garlic; sauté until translucent (2-3 minutes).
Add bell pepper along with oregano, smoked paprika, cumin, salt, and pepper; cook until softened (3-4 minutes).
Mix in cherry tomatoes and olives; cook for another 5 minutes.
Sprinkle feta cheese over the top and let it melt slightly.
Remove from heat and fold in fresh parsley and lemon juice before serving.
