1 lb. ground chicken
1 medium onion, diced
1 tablespoon garlic, minced
1 cup baby spinach, chopped
1/2 cup breadcrumbs
1/4 cup Greek yogurt
2 tablespoons fresh dill, finely chopped
1 tablespoon fresh lemon juice
1 teaspoon dried oregano
1/2 teaspoon paprika
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon ground black pepper
3 tablespoons olive oil
Instructions
Heat olive oil in a skillet over medium heat. Sauté diced onion until translucent (about 5 minutes), then add garlic and cook for another 30 seconds.
In a bowl, mix sautéed onion and garlic with chicken, spinach, breadcrumbs, Greek yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and pepper until well combined.
Shape the mixture into approximately eight half-inch thick patties.
In the same skillet, heat remaining olive oil over medium heat and cook patties for about 5–6 minutes on each side until golden brown and cooked through.
Drain briefly on paper towels before serving warm with your choice of garnishes.
