  • ½ cup cold unsalted butter, cubed
  • 1 egg yolk
  • 1½ cups whole milk
  • ¾ cup granulated sugar
  • 3 large egg yolks
  • ¼ cup cornstarch
  • Zest of 1 lemon
  • ½ cup fresh lemon juice (about 2 lemons)
  • 2 tablespoons unsalted butter

Instructions

  1. In a bowl, combine flour, sugar, and salt. Cut in cold butter until crumbly. Mix in egg yolk and cold water until dough forms. Press into a tart pan and chill for 20–30 minutes.
  2. Preheat oven to 350°F (175°C). Prick the crust with a fork and bake for 12–15 minutes until lightly golden. Let cool slightly.
  3. Whisk together sugar, cornstarch, lemon zest, and egg yolks in a saucepan. Gradually whisk in milk over medium heat until thickened. Remove from heat; stir in lemon juice, butter, and vanilla.
  4. Pour custard into the pre-baked crust and bake at 350°F (175°C) for about 25–30 minutes until set but slightly jiggly in the center.
  5. Allow cooling completely before slicing.
