  • ½ head cabbage, roughly chopped
  • 4 potatoes, peeled and sliced into ¼-inch rounds
  • 1 medium onion, sliced
  • ½ cup chicken stock
  • 1 ½ teaspoons thyme
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix the dry rub ingredients in a bowl and coat the chicken pieces evenly.
  3. In a large oven-safe sauté pan, cook any reserved fat until crispy; set aside.
  4. Sear the chicken thighs in the pan until golden brown on both sides.
  5. Sauté chopped cabbage in the remaining fat until slightly wilted.
  6. Add potato slices, onions, and chicken stock; stir well.
  7. Incorporate chopped bacon back into the mixture.
  8. Arrange seared chicken on top and bake for 45–50 minutes until cooked through (internal temperature of 165°F/75°C).
