  • 1 box Devil's Food cake mix
  • 2 large eggs
  • 1/2 cup canola oil
  • 1/2 cup unsalted butter (room temperature)
  • 2 1/4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 jar vegan marshmallow crème
  • 3/4 cup semi-sweet chocolate chips
  • 1/4 cup heavy cream

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix Devil's Food cake mix, eggs, and oil until combined.
  3. Scoop spoonfuls of dough onto lined baking sheets.
  4. Bake for 8-10 minutes until edges are set; let cool.
  5. In another bowl, beat room temperature butter with powdered sugar, vanilla, salt, and fold in vegan marshmallow crème to make frosting.
  6. For ganache, heat heavy cream over chocolate chips until melted; let cool slightly.
  7. Frost cooled cookies with marshmallow frosting and drizzle ganache on top.
  8. Pipe additional frosting in a squiggle pattern for decoration.
