  • 1/4 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 12 tablespoons milk, as needed for texture

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together softened butter, creamy peanut butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. In another bowl, whisk together flour, baking soda, and salt. Gradually add to wet ingredients until a dough forms.
  5. Roll dough into small balls (about 1 inch), shape into ovals, and press with a fork to create a crosshatch pattern. Sprinkle with sugar.

  8. Spread or pipe filling onto one cookie's flat side and top with another cookie.
