  • 1/2 cup all-purpose flour (for crumb topping)
  • 1/4 cup granulated sugar (for crumb topping)
  • 1/4 cup brown sugar (for crumb topping)
  • 1/4 teaspoon cinnamon (for crumb topping)
  • 1/4 cup melted unsalted butter (for crumb topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine the crust ingredients—flour, sugar, salt—and cut in the cold butter until it resembles coarse crumbs. Press firmly into a lined 9×9-inch baking pan and bake for 15–18 minutes until golden.
  3. For the peach filling, toss sliced peaches with sugar, flour, lemon juice, and vanilla in another bowl. Let sit briefly to release juices.
  4. In a separate bowl, mix crumb topping ingredients until crumbly.
  5. Spread the peach filling over the cooled crust and sprinkle with the crumb topping.
  6. Bake for an additional 45–50 minutes until bubbly and golden brown.
  7. Allow to cool completely before slicing into squares.
