  • 4 tablespoons unsalted butter or olive oil
  • 1 large yellow onion, finely chopped
  • 56 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups low-sodium chicken or vegetable broth
  • 2 cups whole milk
  • 2 cups sharp cheddar cheese, freshly shredded
  • 1 tablespoon fresh parsley, finely chopped
  • 1 tablespoon fresh chives, finely chopped
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Pinch cayenne pepper or smoked paprika (optional)

Instructions

  1. Peel and cube the Yukon Gold potatoes. Rinse under cold water and set aside.
  2. In a large pot over medium heat, melt butter or olive oil. Sauté chopped onion until translucent (about 5-7 minutes).
  3. Add minced garlic and cook for another minute. Stir in flour to form a roux.
  4. Gradually whisk in broth while scraping the pot's bottom for flavor. Bring to a simmer.
  5. Add potatoes and gently simmer until fork-tender (15-20 minutes). Stir occasionally.
  6. Blend half the soup until smooth, then return it to the pot.
  7. Reduce heat and stir in milk and cream (if using), along with fresh herbs.
