  • ½ cup plain Greek yogurt
  • 1½ cups shredded sharp cheddar cheese (divided)

  • ¼ tsp black pepper
  • Optional: spices like paprika or dried thyme

Instructions

  1. Preheat oven to 400°F (205°C). Cut the spaghetti squash in half lengthwise, scoop out seeds, and roast face-down on a baking sheet for 35–40 minutes until tender.
  2. In a skillet over medium heat, add olive oil and sauté onion for about 5 minutes. Add minced garlic and cook for another minute.
  3. Once the squash has cooled slightly, use a fork to shred it into noodle-like strands.
  4. Mix the shredded squash with sautéed onions and garlic in a large bowl. Stir in Greek yogurt, 1 cup of cheddar cheese, salt, pepper, and optional spices.
  5. Transfer to a greased casserole dish and top with remaining cheese. Bake at 375°F (190°C) for 20–25 minutes until bubbly and golden.
