  • 1/4 cup cashew butter (or peanut butter)
  • 1/4 cup maple syrup
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup chocolate chips
  • 1 cup chocolate chips (for topping)
  • 1 tsp coconut oil (for topping)
  • Flaky sea salt, optional

Instructions

  1. In a large bowl, mix almond flour, cashew butter, maple syrup, melted coconut oil, vanilla extract, and salt until well combined. Fold in chocolate chips.
  2. Line a cutting board with parchment paper and transfer the mixture onto it. Press down firmly to flatten into an even layer about 1/2 inch thick.
  3. Melt chocolate chips and coconut oil in a microwave-safe bowl, stirring every 30 seconds until smooth.
  4. Pour melted chocolate over the pressed cookie dough layer and spread evenly. Sprinkle with flaky sea salt if desired.
