  • 1/2 cup diced fresh pineapple
  • 1/4 cup red bell pepper, thinly sliced
  • 1/4 cup cucumber, thinly sliced
  • 1/4 cup chopped green onions (for garnish)
  • 1/4 cup toasted coconut flakes (for garnish)
  • 1 tablespoon sesame seeds (for garnish)

Instructions

  1. Cook jasmine rice according to package instructions.
  2. Mix garlic powder, onion powder, paprika, black pepper, and salt; rub onto chicken breasts.
  3. Heat olive oil in a skillet over medium heat; sear chicken for 6-7 minutes per side until golden brown.
  4. Whisk together soy sauce, pineapple juice, honey, rice vinegar, and ginger; simmer in the same skillet for 3-4 minutes.
  5. Slice cooked chicken into strips.
