  • 4 medium sweet potatoes
  • 1 lb ground turkey
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1/2 cup corn kernels
  • Optional: diced tomatoes and shredded cheddar cheese

Instructions

  1. Preheat oven to 400°F (200°C). Pierce sweet potatoes with a fork, place on a baking sheet lined with parchment paper, and bake for about 40-50 minutes until tender.
  2. In a skillet over medium heat, add olive oil and sauté chopped onion for 3-4 minutes until softened. Add garlic and bell pepper; cook for another 2-3 minutes.
  3. Add ground turkey to the skillet, breaking it apart as it cooks for about 6-8 minutes until browned.
  4. Stir in cumin, chili powder, salt, and pepper; mix well.
  5. Add corn kernels and optional tomatoes; cook for an additional 2-3 minutes.
  6. Slice open baked sweet potatoes lengthwise and fluff insides with a fork. Spoon turkey mixture into each potato.
  7. If desired, top with shredded cheddar cheese and return to the oven for an additional 5-7 minutes until melted.
  8. Garnish with fresh cilantro if desired before serving.
