  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup chocolate chips
  • 1/2 cup Reese’s Pieces

Instructions

  1. Prepare the cheesecake filling by mixing softened cream cheese, powdered sugar, and vanilla extract until smooth. Scoop small dollops onto a parchment-lined baking sheet and freeze for at least one hour.
  2. In a separate bowl, cream together softened butter with brown and granulated sugars until light and fluffy. Mix in one egg and additional vanilla extract.
  3. Combine flour, baking soda, and salt in another bowl; gradually add to the wet mixture until just combined.
  4. Gently fold in chocolate chips and Reese’s Pieces.
  5. Take about two tablespoons of cookie dough, flatten slightly, place a frozen cheesecake filling dollop in the center, cover with more dough, and seal edges.
  6. Bake on a parchment-lined baking sheet at 350°F (175°C) for 12–14 minutes until edges are golden but centers remain soft.
  7. Cool for five minutes before transferring to a wire rack.
