  • 5 ½ oz white chocolate (finely chopped)
  • ¼ cup double cream
  • 3 ½ oz unsalted ground pistachios
  • 3 ½ oz kataifi pastry (chopped)
  • 9 oz milk chocolate (finely chopped)
  • ¾ cup all-purpose flour
  • ⅔ cup cornstarch
  • 1 tbsp butter
  • 1 tsp sugar
  • ½ tsp salt
  • 1 tbsp vegetable oil
  • 1 cup water

Instructions

  1. Prepare the kataifi pastry by whisking flour, cornstarch, sugar, and salt in a bowl. Add vegetable oil and water for a smooth batter.
  2. Heat a nonstick pan over medium-low heat and pipe long strands of the batter onto it. Cook until set, then allow to cool.
  3. Melt white chocolate with double cream in intervals, stirring frequently. Blend in ground pistachios mixed with salt until smooth.
  4. Toast kataifi strands in melted butter until golden brown, then mix them into the pistachio cream.
  5. Chill the mixture until firm, scoop portions, roll into balls, and coat in melted milk chocolate.
