  • 1 ½ cups graham cracker crumbs
  • 2 tbsp granulated sugar
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp coconut extract
  • 8 oz Cool Whip, thawed (plus additional for topping)
  • 2 boxes of instant coconut cream pudding mix
  • 3 cups half-and-half

Instructions

  1. Make the crust by mixing graham cracker crumbs, sugar, and melted butter. Press into the bottom of a 9×13 inch pan.
  2. In a bowl, beat softened cream cheese and powdered sugar until smooth. Add coconut extract and fold in half of the Cool Whip.
  3. In another bowl, whisk together pudding mix and half-and-half until thickened. Pour over the cream cheese layer.
  4. Spread remaining Cool Whip on top and sprinkle with toasted shredded coconut.
  5. Cover with plastic wrap and refrigerate for at least 6 hours before serving.
