  • 2 pounds boneless, skinless chicken breasts
  • 8 ounces fresh mozzarella cheese
  • 2 large ripe tomatoes (or 1 can diced tomatoes)
  • 1/2 cup fresh basil leaves
  • 2 cloves garlic
  • 2 tablespoons extra virgin olive oil
  • Dried oregano
  • Salt and black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, sauté minced garlic in olive oil until fragrant.
  3. Add chicken breasts to the skillet; cook until lightly browned on both sides.
  4. In a baking dish, layer half of the sliced tomatoes, half of the cooked chicken, mozzarella cheese, and basil leaves.
  5. Repeat layers with remaining ingredients and sprinkle with dried oregano.
  6. Cover with foil and bake for 25 minutes; remove foil during the last five minutes for bubbling cheese.
  7. Drizzle balsamic glaze over each serving before plating.
