  • 2 large chicken breasts
  • 4 ounces cream cheese
  • 3/4 cup heavy cream
  • 4 cloves garlic
  • 1/2 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 8 ounces sun-dried tomatoes
  • 3/4 cup fresh spinach
  • 1/4 cup Parmesan cheese
  • 3/4 cup mozzarella cheese

Instructions

  1. Preheat oven to 400°F (204°C).
  2. Slice chicken breasts into thin fillets and season with salt, pepper, and half of the minced garlic.
  3. In a bowl, mix cream cheese and heavy cream until smooth. Stir in remaining garlic, onion powder, paprika, Italian seasoning, Parmesan, and half of the mozzarella.
  4. Spread sauce over chicken fillets in a baking dish. Add chopped sun-dried tomatoes and drizzle with reserved oil.
  5. Cover with foil and bake for 20 minutes until chicken reaches an internal temperature of 165°F (74°C).
  6. Uncover, stir in spinach, top with remaining mozzarella, and bake for an additional 10 minutes until bubbly and golden.
  7. Allow to rest briefly before serving.
