  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 2 jalapeño peppers, seeded and finely chopped
  • 1 green onion, finely chopped
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  1. In a bowl, mix softened cream cheese, cheddar cheese, jalapeños, green onion, garlic powder, salt, and pepper until well blended.
  2. Lay an eggroll wrapper on a surface and place about 2 tablespoons of the mixture diagonally across the center. Fold the bottom corner over the filling, then tuck in the sides and roll tightly. Use water to seal.
  3. Heat vegetable oil in a deep skillet to 350°F (175°C). Fry eggrolls seam-side down until golden brown (about 3-4 minutes).
  4. Remove from oil and drain on paper towels. Serve hot with your favorite dipping sauce.
