  • 4 tablespoons cold unsalted butter, diced
  • 2 large eggs
  • 1/3 cup granulated sugar
  • ½ cup lightly packed brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream or Greek yogurt
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • 1/4 teaspoon coarse kosher salt
  • 1¾ cups all-purpose flour
  • 1 tablespoon butter, at cool room temperature
  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F and grease a 9-inch square baking dish lined with parchment paper.
  2. In a sauté pan, boil the fresh apple cider until reduced by half (about 5 minutes). Measure to ensure you have around ¾ cup.
  3. In a bowl, whisk together the eggs, granulated sugar, brown sugar, olive oil, sour cream, baking powder, baking soda, cinnamon, allspice, and salt.
  4. Slowly mix in the cooled cider until combined. Gently fold in the flour until just incorporated.
  5. Pour batter into the prepared dish and smooth the top.
  6. Bake for 22–25 minutes until golden brown and puffed up.
  7. Let cool for a few minutes before topping with room-temperature butter and sprinkling with cinnamon sugar.
